Ever since I made ice cream in summer school with a plastic bag, ice and some salt, I’ve always wanted an ice cream maker!  Now that I finally have a KitchenAid mixer, plus the ice cream mixer attachment, I can freeze up any flavour I want!  Even better, I can adjust the amount of fat and sugar :) Here’s a simple coffee ice cream recipe that more airy than most commercial ice creams.

Ingredients:

1 cup milk
3 tbsp instant coffee
1/2 cup white sugar
2 cups heavy cream
1 pinch salt

Method:

1.  Whisk together all ingredients into bowl until sugar is dissolved.

2.  Cover and refrigerate mixture for at least 2 hours.

3.  Pour chilled mixture into ice cream maker and freezing according to manufacturer’s directions until it reaches “soft-serve” consistency.

4.  Transfer ice cream into lidded plastic container and freeze overnight

5.  Scoop and serve!

Note:  Do not use glass containers!  Ice cream will turn into rock… learn from my mistake!
