I woke up late this morning (partially on purpose) so I didn’t have much time to eat breakfast. Still, I managed to scarf down some a small bowl of Cheerios before I headed down to Chinatown for volunteer! As you might imagine, I was a hungry hungry hippo when I got back home…
I rummaged through my fridge to see if I could quickly cook something up for lunch. Luckily, I found a couple of marinated pork chops, a sticky rice wrap/roll and some salad!
The sticky rice was hard as rock when I took it out of the fridge, so I quickly steamed it in a makeshift double boiler. Then, I stir fried in it some olive oil and Sriracha hot sauce! At the same time, I quickly seared the pork chop on all sides and shoved it in a pre-heated oven to finish cooking it. Finally, I tossed some salad with some extra virgin olive oil and balsamic vingar.
LUNCH IS SERVED! :)
